Ingredients
- ½ medium watermelon cubed (about 6–7 cups)
- 2 small cucumbers sliced thin (about 2 cups)
- ½ purple onion thinly sliced
- ½ cup feta cheese crumbled (or to taste)
- ¼ cup fresh mint leaves chopped
Dressing
- Juice of 1 lime about 2 tbsp
- 2 tbsp olive oil
- 1 tbsp house vinaigrette
- ½ tsp salt adjust to taste
- ¼ tsp black pepper
Method
- In a large bowl, combine cubed watermelon, cucumbers, purple onion, and fresh mint.
- In a small bowl or jar, whisk together lime juice, olive oil, house vinaigrette, salt, and pepper.
- Pour dressing over the salad and toss gently.
- Top with crumbled feta cheese.
