Ingredients
  

  • ½ medium watermelon cubed (about 6–7 cups)
  • 2 small cucumbers sliced thin (about 2 cups)
  • ½ purple onion thinly sliced
  • ½ cup feta cheese crumbled (or to taste)
  • ¼ cup fresh mint leaves chopped
Dressing
  • Juice of 1 lime about 2 tbsp
  • 2 tbsp olive oil
  • 1 tbsp house vinaigrette
  • ½ tsp salt adjust to taste
  • ¼ tsp black pepper

Method
 

  1. In a large bowl, combine cubed watermelon, cucumbers, purple onion, and fresh mint.
  2. In a small bowl or jar, whisk together lime juice, olive oil, house vinaigrette, salt, and pepper.
  3. Pour dressing over the salad and toss gently.
  4. Top with crumbled feta cheese.
  5. Chill for 10–15 minutes before serving for best flavor.
