Ingredients
  

  • 1 lb smoked sausage sliced
  • 1 cup fresh okra chopped
  • ½ large yellow onion chopped 1 red bell pepper, chopped
  • 1 yellow squash chopped
  • 1 cup fresh corn cut off the cob
  • 6 oz tomato paste
  • 1 teaspoon chicken bouillon or substitute with 1 cup chicken broth
  • 2 cups water divided
  • Olive oil
  • 1 teaspoon butter
  • Salt and black pepper to taste
  • Traces Of Flavor Original seasoning to taste

Method
 

  1. In a large skillet or pot, brown the smoked sausage over medium heat until it begins to caramelize. Remove and set aside.
  2. Heat olive oil and butter in the same skillet.
  3. Add the okra and sauté until the slime cooks out, about 5 minutes.
  4. Add the onion, bell pepper, and squash.
  5. Season lightly with salt and black pepper.
  6. Cook until the vegetables begin to soften.
  7. Stir in the fresh corn, then add the chicken bouillon and 1 cup of water. Mix well.
  8. Add the tomato paste and stir until fully incorporated. Pour in another cup of water to loosen the mixture.
  9. Return the smoked sausage to the skillet and season generously with TOF Original
  10. Reduce the heat to low and let simmer for
  11. 10-12 minutes, allowing the flavors to blend and the sauce to thicken.
  12. Serve with rice.
