Ingredients
- 1 lb smoked sausage sliced
- 1 cup fresh okra chopped
- ½ large yellow onion chopped 1 red bell pepper, chopped
- 1 yellow squash chopped
- 1 cup fresh corn cut off the cob
- 6 oz tomato paste
- 1 teaspoon chicken bouillon or substitute with 1 cup chicken broth
- 2 cups water divided
- Olive oil
- 1 teaspoon butter
- Salt and black pepper to taste
- Traces Of Flavor Original seasoning to taste
Method
- In a large skillet or pot, brown the smoked sausage over medium heat until it begins to caramelize. Remove and set aside.
- Heat olive oil and butter in the same skillet.
- Add the okra and sauté until the slime cooks out, about 5 minutes.
- Add the onion, bell pepper, and squash.
- Season lightly with salt and black pepper.
- Cook until the vegetables begin to soften.
- Stir in the fresh corn, then add the chicken bouillon and 1 cup of water. Mix well.
- Add the tomato paste and stir until fully incorporated. Pour in another cup of water to loosen the mixture.
- Return the smoked sausage to the skillet and season generously with TOF Original
- Reduce the heat to low and let simmer for
- 10-12 minutes, allowing the flavors to blend and the sauce to thicken.
- Serve with rice.
